Бактеріоцини молочнокислих бактерій

Abstract

В огляді літератури дано опис феномена бактеріоциногенії та визначення назви "бактеріоцини". В історичному аспекті представлені відомості про бактеріоцини, що продукуються мікроорганізмами різних таксономічних груп. Наведена класифікація бактеріоцинів молочнокислих бактерій. Відображені фізіолого-біохімічні властивості бактеріоцинів та фактори, що впливають на прояв їх активності. В зкороченій формі викладені методи виділення та очищення бактеріоцинів. Описуються генетичні аспекти продукції бактеріоцинів та системи генетичного переносу детермінант бактеріоцинопродукції.

In the review the phenomenon of bacteriogenecity is described and identification of term “bacteriocins” is given. The information about bacteriocins that are produced by different taxonomical groups of microorganisms is represented in the historical aspect. The classification of bacteriocins of lactic acid bacteria (LAB) is adducted. Physiological and biochemical properties of bacteriocins and factors that influence to expression of their activity are represented. In a short form methods of obtaining and purification of bacteriocins are set on. Genetical aspects of bacteriocin production and systems of genetical transfer of bacteriogenecity determinants are described.
