Безпека використання алюмінієвого посуду під час приготування харчових продуктів

Abstract

Для визначення алюмінію, що знаходиться у розчині у малих концентраціях, запропоновано велику кількість методів, у тому числі і фотометричних. Метод аналізу, використаний у даній роботі, базується на стандарті ГОСТ 18165-2014 і полягає у вимірюванні оптичної густини забарвлених розчинів комплексної сполуки алюмінію з алюміноном.

The aluminum cookware is cheap, lightweight and durable - so it is widely used until now. At the same time, numerous studies show that prolonged exposure to aluminum ion can lead to intoxication of man. The changing of aluminum ions concentration in the water during boiling in an aluminum pot by photometric method have been investigated. Increasing of aluminum concentrations in water after addition of acetic and citric acids was found. The results show an increase in aluminum content in water with increasing duration of heat treatment using aluminum cookware. Partial migration of aluminum ions from water into potatoes during boiling was found.
